Anyone who knows me, knows that I LOVE breakfast food and I will eat it any time of day. As a Jersey girl, I grew up going to local diners & "greasy spoons," enjoying the yumminess that is the beloved omelette with a side of well done home fries and toasty toast. :-) Mmmmmm... Burn the homefries! Dooooo itttttt!
Now, I make it a point to cook a healthy, nutritious, and well-rounded breakfast in the comfort of my own home for myself and my husband, although I must admit to indulging in the rare diner experience now and again. One of my absolutely favorite breakfasts to make is avocado toast with an egg over easy on top.
You'll need:
1 egg
1 slice of ezekiel bread
1/2 avocado
black pepper
sea salt
crushed red pepper flakes
coconut oil
(I choose to use all organic ingredients)
In an omelette pan, start heating up your coconut oil. Make sure you have the heat on medium so the oil doesn't burn. While the oil is heating up a bit, put your slice of bread in the toaster. Next, crack your egg into the oiled pan and let it get to sizzlin'. Slice an avocado in half and gut the side that does not have the pit in it (if you're going to save the other half of avocado for later, save the one with the pit in it). Smush (technical cooking term) the guts of that avocado like you really mean it... Add a pinch of salt and some pepper to taste. Depending on how you prefer your egg, tend to it. Then spread the avo mash onto your toast and sprinkle on some red pepper flakes. Finish it off by laying the egg on top and enjoy!
